Patagonia Provisions’ Atlantic mackerel comes from the Bay of Biscay, in northern Spain, where the fish school prolifically and are caught by hook and line.  This careful harvest method produces beautiful, whole filets and preserves the fish’s flavor because they aren’t crushed and broken in nets.
